To make these yummy pumpkin pie bites, you will need:- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup Swerve sweetener
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1/4 cup pumpkin puree
- 1/4 cup melted coconut oil
- 1/4 cup heavy cream
- 1 tsp vanilla extract
Instructions
1. In a mixing bowl, combine almond flour, coconut flour, Swerve sweetener, salt, cinnamon, nutmeg, and ginger.
2. Add in pumpkin puree, melted coconut oil, heavy cream, and vanilla extract. Mix well until a dough is formed.
3. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
4. Flatten the balls using a fork to create a pie crust shape.
5. Chill the pie crusts in the fridge for at least 30 minutes.
